- Cut the baguette into pieces about 2 1/2 to 3 inches (6–7 cm) thick, stand them up, and slice off the top to flatten. 2. Slice the leek into half-moons and sauté it in a mix of olive oil and butter. Add the spinach, salt, and pepper, and cook until the leaves wilt. 3. Scoop the leek and spinach into a separate bowl, then fry thin strips of bacon in the same pan. 4. In the bacon drippings, fry the baguette pieces, pressing them flat with a spatula as they cook. 5. Blend the yolks with the salt, lemon juice, and paprika. Melt the butter in the microwave and pour it into the yolks, blending again. Transfer the sauce to a saucepan and warm it over a water bath (double boiler), whisking constantly. As soon as it starts to thicken, take it off the heat and let it cool slightly. 6. The next component is the poached egg, cooked without its shell. Bring water to a boil and salt it lightly. Crack an egg into a cup and slide it into the simmering water. You want a soft yolk, so cook it just a couple of minutes. Lift the egg out with a slotted spoon onto a strainer to drain. 7. Top each fried baguette slice with 1 tablespoon of the spinach, then a piece of bacon, then a poached egg, and finish with a generous spoonful of hollandaise. Enjoy!
