Perfect Rice in 15 Minutes

The perfect side dish! Sesame rice in 15 minutes. Sesame is a wonderful pairing for rice. It's ideal with shrimp in a cream sauce.

  • Pour 1–2 tablespoons of vegetable oil (olive oil is best) into a heavy-bottomed saucepan. Add 1 tablespoon of sesame seeds and warm them for 1 minute. Add a finely chopped garlic clove and warm for 1 minute (it's important not to let the garlic burn, or it will turn bitter). Add 1 cup of rice (polished basmati is best) and a pinch of salt. Stir to combine and warm briefly. Pour in 2 cups of boiling water. Bring to a boil and reduce the heat to the lowest setting. Cover tightly and cook for 10 minutes. Taste the rice. If it's done, turn up the heat and cook off any remaining water. That's it—your side dish is ready!
