Step 1:
Porridge: Put rice in a saucepan with plenty of boiling water, cook for 7-8 minutes.Flip it into a colander, drain the water.Remove the cardamom seeds from the boxes, put them in a mortar, add cloves and cinnamon, grind into powder.Pour the milk into a small saucepan with a thick bottom, bring to a boil over medium heat.Put the rice, add salt to taste and, stirring, cook on low heat for about 15 minutes.
Step 2:
Add sugar and ground spices, stir, close the lid. Bring the porridge to readiness in a water bath, putting it on a large saucepan, one-third filled with boiling water, 10-15 minutes. The porridge is ready.
Step 3:
For zraz, pour the prunes with warm water for 10-20 minutes (depending on its softness), then dry and chop. Separate the protein from the yolk, whisk the protein into a fluffy foam. In a warm porridge, add the yolk, whipped protein and mix well.
Step 4:
From the resulting mass, make tortillas about 1 cm thick, put prunes in the middle, connect the edges and give the zraz an oval shape. Fry in a frying pan until cooked, rolled in breadcrumbs, in well-heated ghee until golden brown on all sides, 5-7 minutes. Finita! Bon appetit!
