Prune-Stuffed Rice Zrazy (Milk Rice Pudding Croquettes)

  1. Step 1:

    Make the rice pudding: Add the rice to a pot of plenty of boiling water and cook for 7–8 minutes. Drain in a colander. Take the cardamom seeds out of their pods, put them in a mortar with the cloves and cinnamon, and grind to a powder. Pour the milk into a small, heavy-bottomed saucepan and bring to a boil over medium heat. Add the rice, salt to taste, and cook over low heat, stirring, for about 15 minutes.

    Add the sugar and ground spices, stir, and cover. Finish cooking the pudding in a water bath — set the pan over a larger pot filled one-third with boiling water — for 10–15 minutes. The pudding is ready.

    For the filling, soak the prunes in warm water for 10–20 minutes (depending on how soft they are), then pat dry and chop. Separate the egg white from the yolk and whip the white to fluffy peaks. Stir the yolk into the warm pudding, then fold in the whipped white and mix well.

    Shape the mixture into patties about 1/2 inch (1 cm) thick, place some prunes in the center of each, bring the edges together, and form into ovals. Roll them in breadcrumbs and fry in well-heated ghee until golden on all sides, 5–7 minutes. Done! Enjoy!
