- Put the chokeberries through a meat grinder (or crush them by hand or with a potato masher), add 200 g of sugar and a little water (a cup), and mix. Put the berries and the resulting liquid in a jar, add the raisins (don't wash them), and fit an airlock. Move the jar to a warm, dark place to ferment. After 10-14 days (depending on the temperature), drain off the juice and squeeze the berries out well. Repeat the same process: add sugar (150 g) and water (150 ml), fit the airlock, and wait 10-14 days. After that time, siphon off the juice through a tube without disturbing the sediment, and repeat the whole process a third time. When the airlock stops bubbling, the wine is ready. Drain it and strain it through cheesecloth for greater clarity. Bottle the young wine and put it in the refrigerator, where it should fully mature. This takes quite a while — anywhere from 4 to 6 months. Wait for the right occasion and savor the fruits of your labor!
