So, arm yourself with a colander and a deep bowl (saucepan) suitable in diameter. Line the colander with gauze in 6 layers, put it on a bowl.
Pour kefir into a colander and put the whole structure in the refrigerator.
After 8 hours, remove the colander. Transfer the resulting sour cream to a clean and dry jar (and you can make dough from the whey that you find in the bowl).
