Marinade for Smoking Fish

With this marinade, your fish takes on a new flavor. Try it! Do you like to smoke fish? So do I — it's delicious. But if you marinate it in a mix of herbs and soy sauce before smoking, the fish becomes more aromatic and extra flavor notes come out. This much marinade is enough for a fish weighing about 800 grams.

  • In a small mortar, grind the juniper berries, then add the salt and saffron. Mix. Rub the cleaned, gutted fish all over with the prepared seasoning. Drizzle soy sauce generously over every side and tie it up with twine so the fish keeps its shape while smoking. Ideally, marinate the fish for 4-5 hours, but if you're short on time, 30-40 minutes will do. Cook with pleasure!
