- When I was little, I couldn't stand soups. As I grew up, I realized there's a special charm to them, and now I make them often and with real pleasure. My all-time favorite became a light chicken soup with homemade noodles. If you still don't know how to make it, I'm glad to share the recipe! Start by rinsing the chicken and placing it in a pot with 3 liters of water. Salt to taste and add peppercorns and a bay leaf. Set the pot over medium heat, bring to a boil, then lower the heat and simmer the chicken broth for about 30–40 minutes. Meanwhile, make the noodles: beat an egg, work in the flour, and knead a stiff dough. Roll it out to about ¼ inch (0.5 cm) thick, then cut it into strips about 0.3–0.5 cm wide and 2–3 cm long. When the chicken is cooked, take it out and add the potatoes, cut into not-too-small pieces, to the broth; a little later, add the finely chopped onion, carrots, and bell pepper. Cook it all for about 10 minutes, then drop in the noodles. While the soup finishes, pull the chicken meat off the bones and return it to the broth. After 5–7 minutes the soup is ready. Take it off the heat and ladle it into bowls. Enjoy!
