- "Cordon bleu" translates as "blue ribbon" — a ribbon awarded for culinary excellence, a mark of the finest work from a cook or a recipe. So this dish carries the blue ribbon, which means it's the best. Cut the chicken breasts in half, and if they're too thick, butterfly each piece into two thin layers. Lay a slice of cheese and a slice of ham on each piece, fold the edges toward the center, and secure with a toothpick. In a separate bowl, mix the flour with the paprika. Dredge the chicken bundles in the flour and fry them in preheated butter, browning them on all sides. Add the wine and broth, lower the heat, and simmer for thirty minutes, until the chicken releases its juices. Remove the chicken and take out the toothpicks. In a small bowl, whisk the corn starch with the cream. Warm it in a shallow pan over low heat, stirring constantly, until the sauce thickens. Serve the chicken warm, spooning the creamy sauce over the top.
