Steamed Choux-Dough Vareniki with Strawberries
A splendid sweet meal that will especially delight your kids! Vareniki (dumplings) with strawberries are the best summer treat in our family. On New Year's, for example, you can fill these with anything — they'll stand in for an appetizer and round out your table. Choux dough for vareniki is a bit tricky to get right; there are a few specific requirements. But I've spelled them all out in the recipe below, so the chance of a misstep is kept to a minimum. This recipe might surprise you a little, but one taste and you'll see just how delicious it is — and it's quite economical, too, which is an undeniable bonus.

Put the flour and finely chopped pieces of butter into a bowl, then add the salt. Start kneading with a spoon while pouring in a thin stream of boiling water. Keep working it so no lumps remain.

The dough should have the consistency of good old flour paste, just a bit stiffer. Then turn it out onto a floured surface and knead until it reaches a nice elastic consistency.

Chill the dough in the refrigerator for half an hour. After that, roll it out into a large, thin sheet and cut out rounds.

Fill the rounds with the filling you've chosen and prepared ahead of time.

If you end up with a lot of vareniki, no problem — you can freeze some.

Now for the most important part. If you simply boil choux-dough vareniki, they'll turn out shapeless and inedible, so they must be steamed. Steam freshly made ones for 3–4 minutes, and frozen ones for 5–6 minutes.
