Prune Salad with Tomatoes and Cheese

This delicious salad is a real treat — light and utterly simple! Sometimes you want to surprise your guests with something exquisitely lovely, perfect in both flavor and form. In those moments I always think of this prune salad with tomatoes and cheese, which I call "Delicious Perfection" — a recipe printed on a bag of prunes I bought way back in the nineties.

  • Cut the washed, stemmed tomatoes into wedges. Grate the sharp cheese on the coarse side of the grater. Meanwhile, let the prunes plump up for half an hour in a saucepan of boiling water. Hard-boil the eggs, chill them, then chop them into small, neat pieces. Peel a medium pickled cucumber and chop it the same way. Combine the ingredients, salt them, and dress with sour cream. Garnish the top with pickled fruit or rings of canned pineapple. This wonderful salad always graces my holiday table, and everyone admires it — I have to be the first to dig in, since no one else dares to disturb something so delicately beautiful.
