  • Mushrooms are most often eaten fried, but let me tell you — it's even better to make a puréed soup from fresh ones. Almost any spongy (bolete-type) mushroom will do. So, clean the mushrooms, wash them thoroughly, and chop them finely. Transfer them to a saucepan and cook down for 15 minutes. Add a couple of tablespoons of butter and cook over low heat for another 5 minutes. After that, sprinkle in the sifted flour and pour in the broth. Season with salt and pepper and stir it all together. Then add the milk and sour cream and cook for another 20 minutes. Transfer the soup to a blender and purée until smooth, return it to the pot, and warm through over low heat. Ladle the finished soup into bowls and serve. It comes out wonderfully fragrant and delicious — nothing beats the rich aroma of freshly picked porcini. You can also make this soup with other mushrooms, including button mushrooms. Give it a try — you won't regret it.
