- Cauliflower is a very healthy, low-calorie, and delicious vegetable. It's rich in potassium, magnesium, calcium, manganese, and iron, plus vitamins C, B1, B2, B6, and K. And there's so much you can make with it! Cauliflower soup is a special favorite of mine and my family's. My mother-in-law shared this recipe with me, and now I'm happy to pass it along to you. Start by making a meat broth — you decide which meat and how much. Once the broth is ready and you've taken out the meat, add diced potatoes to the still-simmering broth and cook for 8–10 minutes. Meanwhile, grate the carrot on a coarse grater and break the cauliflower into small florets. Add them all to the broth. After about 8 minutes, add tomatoes cut into small cubes along with the chopped onion and garlic. Cook for another 8–10 minutes. Serve the soup sprinkled with dried basil.
