Naryn — Kyrgyz Beef Salad

Nothing extra in this dish—just wholesome, delicious ingredients! Naryn comes from Kyrgyz cuisine. It's very nourishing and good for you, made with walnuts (rich in iodine) and beets (great for a body cleanse). Let's make this wonderful dish together.

Cooking method

    Rinse the beef under cold running water.

    Trim off the membrane and any tough sinew.

    Boil the beef in one whole piece until done, then remove and let it cool.

    Meanwhile, boil the beet; once cooked, let it cool and peel it.

    Cut the cooked beef and beet into small cubes, about ¼ inch (5 mm).

    Dice the cheese and the hard-boiled egg the same way.

    Finely dice the onion.

    Combine all the ingredients in one bowl.

    Toast the walnuts in a dry skillet, then add them to the bowl.

    Dress the salad with the mayonnaise.

  • Take the meat and rinse it under cold running water. Trim off the membrane and any sinew, which is no good—hard to cut and to chew. Boil the meat in one whole piece until done, then remove it and let it cool. At the same time, put the beet on to boil; once it's cooked, cool it and peel off the skin. Cut the cooked meat and beet into cubes about ¼ inch (5 mm). Dice the cheese and a hard-boiled egg the same way, and finely dice the onion. Combine all the ingredients in one bowl. Add the finely chopped garlic and the walnuts, which you've toasted beforehand in a skillet. Dress the dish with mayonnaise and season with salt and pepper to your own taste. Garnish the Naryn with fresh herbs and walnut halves. Enjoy!
