  • Feijoada is Brazil's national dish. These days it's made with all sorts of meats, spices, beans, and cassava flour, and it's traditionally served in a clay pot alongside orange slices, collard greens, hot pepper sauce, and rice. Every region has its own take with its own add-ins. I made this classic a while back, and I'd love for you to give it a try too. Start the day before: soak the black beans overnight, then boil them for about half an hour. Add the salt-cured pork (soaked ahead of time) and keep cooking. Finely dice the onion, mince the garlic, and sauté them in olive oil. Next, add big chunks of chorizo, smoked pork ribs, and smoked bacon. Season with black pepper and toss in a bay leaf. Finally, add the beans and the cooked salt pork, pour in water, and simmer over low heat for about 40 minutes. And it's ready! This is a hearty, meaty dish loaded with smoky flavor and a whole new range of tastes. Enjoy!
