  • I lived in America for several years and picked up an enormous number of terrific recipes there. Americans have a special relationship with cooking. Sure, plenty of them eat mostly fast food because they're short on time — but when they do cook at home, it's genuinely an art. American cuisine is known for its inventive dishes and unexpected flavor combinations. I've since moved back home, but I brought a few one-of-a-kind recipes with me, and I'd like to share one of them with you. So today's project is a frisée salad with poached egg and bacon. Start by cutting the bacon into small pieces and frying it. Line a plate with a paper towel and set the bacon on it to drain off the excess fat. Don't discard the fat left in the pan — use it to sauté the shallot, which you'll want to cut into half-rings. In a saucepan, bring some water to a bare simmer and add a splash of vinegar. Slip a raw egg into the vinegared water and cook gently until the poached egg is fully set. To the sautéed shallot, add the frisée (washed and dried ahead of time), along with the champagne vinegar, and let it wilt briefly. Return the bacon to the pan, season with salt, and toss. Now mound the salad on a plate and top it with the poached egg. Just before serving this delightful dish, be sure to add a final pinch of salt and pepper. And there you have it — a peerless salad. Once your guests taste this masterpiece of American cooking, you'll never have to send out special holiday invitations again.
