  • This dish is a familiar one to many. Long ago, people noticed that some vegetables are hollow inside and started using them as edible containers — you could bake meat, other vegetables, or grains right inside them. The most common examples are recipes for stuffed bell peppers, which come as a ready-made vessel for the filling and have a distinctive flavor all their own. Take a piece of lean meat on the bone. Separate the meat from the bone and use the bones to make a broth. Grind the meat through a meat grinder along with onion. Then mix finely chopped parsley, salt, pepper, spices, and rice into the ground meat. Beat one egg and stir that in as well. Into the boiling broth, add the carrots (sliced into rounds), the tomatoes (best grated), and finely chopped raw onion. Cook it all for twenty minutes. Then add the stuffed peppers and the potatoes, cut into wedges. Cook over low heat until the rice is done. A few minutes before the end, season the broth with salt and spices. Serve in deep bowls, sprinkled with fresh herbs. Set out vinegar and soured milk on the side.
