- Gather your ingredients and let's get started:
- press the cottage cheese through a sieve and transfer it to a bowl;
- add the sugar, sift in the flour, crack in the egg, and add the softened butter and sour cream;
- knead into a dough; if it sticks to your hands, work in a little more flour until the dough turns smooth and elastic;
- let the dough rest for 15 minutes, then roll it out into a thin sheet and cut out rounds using the rim of a glass;
- press the tines of a fork around the edge of each round to give it a textured border, then fold the round in half, and in half again;
- fry the cookies in vegetable oil until golden on both sides (keep the heat at medium and cook about 4 minutes per side).
- Serve the cookies warm, though they're just as good cold.
