- Scale the fish, remove the membranes inside, cut off the fins, and rinse under running water. Make shallow slashes along the length of each fish, sprinkle with lemon juice, and season with salt and pepper. Dredge the fish thoroughly in flour on all sides — don't skimp — and lay them in a well-heated skillet with vegetable oil. Over high heat, fry the notothenia on both sides until a golden crust forms, then cover, lower the heat, and cook through (about 4–5 minutes). Don't wait for the fish to cool! Serve with any side dish or a vegetable salad. Enjoy!
