  • Start by thawing the fish. If you're lucky enough to have it fresh, gut it, scale it, and rinse it well under cold running water. Cut large fish into serving pieces; small ones can be left whole. In a shallow bowl, stir together the flour and salt, then dredge each piece of fish in the mixture. Heat the sunflower oil in a heavy-bottomed skillet and fry the fish on both sides until golden and crisp. Serve with fresh or steamed vegetables. Enjoy!
