Pan-Fried Dorade (Sea Bream)

Delicious fried fish with a crispy skin and an incredible aroma! I love dorade for its wonderful flavor, low calorie count, and the fact that it doesn't have a ton of bones — that last part really wins me over, since bones were exactly why I didn't care for fish until I grew up. I'll eat it any way, but pan-fried is my favorite!

    1. Scale the dorade, remove the gills, gut it, and rinse it thoroughly. Blot away any excess moisture with paper towels. 2. Rub the fish all over with a mix of salt and dry spices, then let it sit for 20–30 minutes so the flesh can soak up the flavor. 3. Heat a skillet (I like to use a grill pan) with oil and sear each fish over high heat for just a couple of minutes per side. 4. Now turn the heat down to medium and cook the fish a few more minutes per side. If the fish are large, repeat once more — another couple of minutes on each side. The dorade is done. It pairs beautifully with fresh herbs and vegetables. Serve it hot with your favorite sauces. Enjoy!
