- First, clean the fish, removing any inedible parts and rinsing well inside so it won't taste bitter. Season the fish (and the roe, if there is any) with salt and let it sit for 15 minutes to take up the salt. 2. Meanwhile, beat the eggs and pour them into a wide, shallow dish. Add the red pepper and/or fish spices. Put the flour in a second shallow dish. 3. Bread the fish in this order: flour, egg, flour. Bread the roe the same way. 4. Fry the fish in a hot, oiled skillet on both sides until golden. In a separate skillet, fry the roe, pour in any remaining egg, and cook until the egg is set. That's it. Enjoy!
