Breaded Fried Beef Udder

Make a dish that's a delicacy and budget-friendly at the same time — and really tasty! Not everyone knows that beef udder isn't just edible, it's also very nutritious and delicious. We discovered it a while back and now make it from time to time. Here's my favorite way to cook this unusual cut.

  • Cut the udder — already boiled in salted water and cooled — into medium slices about 1/2 inch (1 cm) thick.
  • Season the slices with salt and pepper.
  • Put the flour on a plate.
  • Put the breadcrumbs on a separate plate.
  • Crack the egg into a bowl and beat it with a pinch of salt using a fork.
  • Heat a skillet with vegetable oil.
  • Dredge the udder slices in flour, dip them in the beaten egg, then coat them in breadcrumbs.
  • Fry on both sides until they form an appetizing crispy crust.
  • Melt the butter. Serve hot with your favorite side and vegetables, drizzling the melted butter over the fried udder. Enjoy your dinner!
