- Cut the okra and shallots into rounds. 2. Heat a skillet with the vegetable oil. 3. Add the shallots and fry for 3–4 minutes. 4. Add the okra and green peas and, stirring, fry them with the shallots for another 3–4 minutes. 5. Add the spices and salt. Stir and keep over the heat for a couple more minutes. 6. Serve the finished dish hot. Fried okra is a perfect match for rice. Enjoy!
