- Fried carp is a simple but very tasty dish. It was once served on major holidays, and every self-respecting cook in a well-off household knew the recipe. Surprise your guests with fried carp at your next celebration. Clean a freshly caught or store-bought carp, remove the bones, and cut it into serving pieces. Season the fillets with salt and pepper and dredge them in flour. Heat a skillet and melt the butter. Fry the carp over high heat on all sides until it develops an appetizing golden, crispy crust. Slice the prepared porcini mushrooms (button mushrooms work too) thinly. Add them to a skillet with melted butter. After 10 minutes, add a little water. Season with salt and cover the pan. Simmer the mushrooms over low heat until tender. Arrange the fried carp and mushrooms on a platter. It's best served hot, though fried carp is still excellent cold. Fried potatoes make a great side. Enjoy!
