Fried Farmer's Cheese Syrniki with Raisins
Delicious, filling syrniki for a hearty breakfast! Raisins aren't just for casseroles — they're great in syrniki too. My kids will only eat them with raisins; it's a little surprise for them. A friend gave me the recipe. I'd been struggling to get my kids interested in syrniki. She just called it "Syrniki with Raisins."

Cooking method
- Here's how to make them. Take a deep bowl and add the tub of farmer's cheese. Mash it with a fork. Add a pinch of salt, the sugar, and one egg. Mash and mix everything together with the fork until you have a smooth, pale-yellow batter. For extra aroma, stir in a packet of vanilla sugar. Wash the raisins, put them in another deep bowl, and cover them with boiling water. Let them sit for about ten minutes to plump up. Then drain and let them dry. Add them to the cheese and mix well. Finally, gently work in the flour and knead the batter. Add the flour by eye — the batter should be a little rough and shaggy. Now heat vegetable oil in a skillet. Shape the batter into balls or patties about 1/2 inch (1 cm) thick. Fry them until golden on both sides, about 5 minutes per side. That's all — enjoy!
