- When I was little, I always stared at the fish counter with fascination. Why? Because there, behind the glass, almost always lay a fish I didn't recognize, labeled "flounder." What drew me to it was how different it looked from every other fish. But my mom never bought flounder. I grew up and left home for another city to go to university. One day, walking through a supermarket, I spotted fresh flounder at the counter and decided I absolutely had to buy it and try turning it into something wonderful. I'll be honest — of all the ways to cook flounder, the only one I truly love is fried, and that's the recipe I'm going to share. So, to start, peel the onion and slice it into thin half-rings. Now wash the oranges, cut them in half, and squeeze out the juice with a juicer or by hand. Sauté the onion in a skillet with a little oil, then remove it. Take the flounder fillets, season them with salt and pepper, and fry them in oil on both sides until golden. Add the onion and orange juice back in and simmer the fish until it's cooked through.
