- Fried tuna is one of our family's all-time favorites, so we often make it for family gatherings. This recipe has been passed down through the generations in our family, and we prepare it in our own special way. In a skillet, heat the olive oil and butter together and season them with salt. Dredge the pieces of fish in breadcrumbs and fry them for 2 minutes per side. Take the fish out and, in the same pan, add the shrimp — peeled and rinsed first — and fry them 2 minutes per side. Now make the sauce. Peel the onion and garlic, rinse them, and chop them very finely. Sauté the chopped onion and garlic in a skillet. Add the tomato paste, salt to taste, and the sugar, and cook for about 1 to 2 minutes. Whisk the flour into the cold broth, stir in the tomato paste mixture, and set it on the stove. Once it comes to a boil, add 2 or 3 drops of Tabasco — just enough to give the sauce a little kick. Serve everything hot. You can serve the sauce on the side if you prefer.
