Fried Chicken Wings with Bell Pepper and Soy Sauce

Every wing is a harmony of flavor and aroma! It's a simple set of ingredients for pan-fried chicken wings, but the payoff is huge — this is one of my favorite recipes to serve with a cold beer or a drink!

  • Cut each wing into three sections at the joints and discard the wing tip. Bring a pot of salted water to a boil, drop in the wings for three minutes — just until the skin turns white and taut and the meat is barely cooked — then rinse under cold water. Transfer the wings to a large bowl for the first marinade: pour in 3 tablespoons of oyster sauce, a tablespoon of rice vinegar, a couple of pinches of powdered sugar, a tablespoon of whole-grain mustard, and a few crushed garlic cloves. Let them sit for two hours. Meanwhile, crush the dried chili, cut the bell peppers into thin strips (use different colors for a brighter look), mince the fresh chili, and slice the onion into thin strips. In a deep skillet, heat 3 tablespoons of sunflower oil, add the crushed chili, and warm it until you catch a sharp aroma. Add the wings and fry, stirring, for about seven minutes, then pour in the marinade, stirring all the while. As the marinade thickens and caramelizes, keep stirring vigorously so it coats every wing evenly. Remove the wings and start the second marinade: sauté the onion, then add the bell pepper. Once the pepper softens, add the pickled chili, a cup of water (or the broth the wings cooked in), and a little salt to taste if needed — keep in mind the oyster sauce is already quite salty. Reduce the sauce by about a third and stir in a tablespoon of rice vinegar. Turn off the heat, return the wings to the pan, stir, cover, and let them marinate on the cooling burner for at least an hour. Serve the wings slightly warm with plain rice. Done!
