Glass Noodles (Funchosa) with Chicken and Vegetables in Soy Sauce
Tasty noodles with chicken and vegetables for dinner. These delicious Asian-style noodles are a hit with adults and kids alike — they have no strong flavor of their own and look much like regular pasta. Funchosa with vegetables and chicken makes a wholesome, filling dinner.

Step 1:
Gather the ingredients from the list. Fresh vegetables are best, but out of season you can use frozen — I take beans and pepper from the freezer. Use small carrots, onion, and tomatoes (mine are two little ones). Vegetable oil for frying. For spice, I use ground red pepper (paprika; feel free to add others). Get a skillet ready.

Step 2:
Rinse the chicken fillet under running water and cut it into strips about 1–1½ inches (3–4 cm) long. Heat the skillet, add oil, and add the chicken. Fry over medium heat until it changes color.

Prepare the glass noodles per the package directions. Take the noodles out of the package and put the amount you need in a deep bowl. Pour boiling water over them until fully submerged. Let them sit 10–15 minutes, turning occasionally, and keep an eye on them so they don't turn mushy.

Step 4:
Grate the carrot on the coarse side of a grater or cut it into small sticks; cut the onion into half-moons, mince the garlic, and dice the tomatoes. Add the chopped vegetables to the fried chicken and stir. Cook the chicken and vegetables uncovered over medium heat for 5–7 minutes, stirring constantly.

Step 5:
Drain the soaked glass noodles in a colander to shed the excess liquid. You can cut the noodles into shorter lengths if you like, or leave them long.

Add the frozen green beans and bell pepper to the pan (I didn't thaw them first). Add the soy sauce, spices, and a little salt, and stir. Cook the chicken and vegetables over medium heat until the vegetables are done. Taste for salt at the end and adjust. Leave the pan uncovered, and lower the heat if needed.

Step 7:
Add the glass noodles to the pan with the chicken and vegetables and mix well. The noodles are unsalted, so let them mix in completely and sit a few minutes to soak up the flavors.

Step 8:
Serve the funchosa with chicken and vegetables hot. It's a complete meal for the whole family. Garnish with fresh dill before serving.
