Step-by-step cooking
Step 1:
Prepare the ingredients according to the list. Let's focus on the recipe for cabbage filling with boiled chicken eggs. Pies with this filling were often baked and fried by my grandmother, and everyone really liked such pastries. The first step is to hard-boil chicken eggs. Cook them for about 12-15 minutes from the moment the water boils, cool, clean and finely chop with a knife.
Step 2:
White cabbage for filling according to this recipe is better to use young and juicy, because we will not stew it, it will be used fresh. The cabbage head is cleaned from the upper dry and dirty leaves. We cut out the stalk, cut the cabbage into several pieces so that it is convenient to chop it in a food processor or blender.
Step 3:
My grandmother and mother still use a wooden trough and a hand-cut as a cabbage chopper, and even after trying such modern devices that have simplified the cooking process, like a blender and a food processor, they do not want to give up their manual assistant and claim that cabbage, chopped manually, is in the filling for pies, it turns out much better, tastier and juicier. Therefore, if there are such devices, then you can use
Step 4:
I chopped cabbage in a blender. Put the chopped cabbage in a deep bowl, squeeze out the excess juice.
Step 5:
Add chopped chicken eggs, salt to taste. Melt the butter in a microwave oven, let it cool to room temperature and pour it into the cabbage filling, mix.
Step 6:
The filling for the pies is ready. If desired and to taste, finely chopped fresh herbs can be added to the filling. It remains to prepare or use the already prepared dough, form, fry or bake pies. Both yeast and unleavened dough are suitable for such a filling, and the pies will be delicious both fried in a frying pan and baked in the oven. Enjoy your meal!
