Homemade Garlic Sauce for Shawarma

Classic, the best, the original! Not everyone manages to make a good garlic sauce for shawarma at home. This recipe comes as close as possible to the original - the one they use at the little shawarma stands by the subway, the tastiest I've ever had.

    How do you make shawarma sauce? Prepare all the ingredients. Use higher-fat sour cream and mayonnaise - the sauce should be fairly thick, and we'll also be adding kefir, which thins it out either way. My paprika is smoked - it gives the finished sauce a wonderful aroma. Any fresh herbs work: dill, parsley, and cilantro are all great.

    In a separate bowl, stir together the sour cream, kefir, and mayonnaise. I recommend homemade mayonnaise - that way you at least know what's in it. Store-bought versions contain a lot of unhealthy additives, so I don't recommend them.

    Add the paprika and khmeli-suneli. At this point you can also add any favorite spices and herbs: chili pepper, fenugreek, any dried herbs - all of it works well if it's to your taste.

    Wash the herbs, dry them, chop them finely, and add them to the sauce. If you don't have fresh herbs on hand, you can use dried ones instead.

    Peel the garlic, mince it, and add it to the sauce as well. I put the clove through a press, but you can grate it on a fine grater or chop it with a sharp knife. If you don't have garlic, you can use garlic powder - 1 teaspoon is enough.

    Wash the cucumber, dry it, and chop it very finely. You can also grate it and then squeeze it well. Either a dill pickle or a sharper, more vinegary pickle works.

    Add the diced cucumber to the sauce and stir well until smooth.

    The stand-style shawarma sauce is ready. It's thick enough not to leak out of the flatbread and pairs beautifully with pieces of pork and onion. Enjoy!
