Quick and Easy Skillet Flatbreads

Thin, soft flatbreads — a wonderful alternative to bread! These skillet flatbreads come together very quickly since they contain no yeast. The dough is made from water, wheat flour, salt, and baking powder. There's no need to chill it — once it's mixed, you can start shaping right away.

    How do you make quick and easy flatbreads? Gather all your ingredients. You'll need wheat flour. If you like, you can add a few spoonfuls of rye, oat, or whole-grain flour to the dough.

    Take a good-sized deep bowl for kneading the dough and pour in about 2 cups of the sifted flour.

    Make a well in the center with a large spoon. Add the salt for flavor, and the baking powder for a lighter, softer texture.

    Now pour cool water — tap water is fine — into the well. Stir the dough by hand or with a spoon, working from the center outward. That way all the flour gets incorporated and you avoid lumps. Once you have a smooth, loose consistency, add the rest of the flour as needed.

    Now knead the dough by hand. It comes out firm yet soft. Roll it into a log and divide it into 5–6 pieces.

    Knead each piece and flatten it with your palm. With a rolling pin, roll it into a round about 1/8 to 1/4 inch (4–5 mm) thick. The thickness can vary, but keep it under 1/2 inch (1 cm).

    Heat a high-smoke-point sunflower oil in a nonstick skillet. How do you know the oil is hot enough? Dip a spatula in — if bubbles gather around it, it's time to fry. Place one flatbread in the pan and fry over medium heat until golden. Flip it with a wooden spatula and fry the other side. Cook the flatbreads one at a time, browning each on both sides.

    Stack all the fried flatbreads on a plate. Let them cool a little and serve. Even though they're made from an unleavened dough, they come out very tasty and soft. Enjoy them on their own or as a stand-in for bread. Enjoy!

  • These flatbreads fry up golden in a little oil. To my taste they're best served warm. For convenience, you can cut a flatbread into 4 pieces. Unleavened flatbread is delicious with soup, stew, or even coffee.
  • These yeast-free flatbreads pair well with all kinds of sauces or spreads. Cut one into four triangles and spread each with a liver or fish pâté for a great open-faced snack. Serve it with borscht, okroshka, a fruit compote, or tea.
  • Don't expect anything fancy from this bread, though. With these ingredients it won't come out fluffy, so keep that in mind.
  • Be ready to use a little more or a little less flour than the recipe calls for. Go by the consistency of the dough rather than the exact amount of flour — different flours behave differently.
