    How do you make cutlets with an egg inside? Start by gathering your ingredients. You can use any kind of meat for these; I'm making mine with pork and chicken. Run both meats through a grinder, or just buy them already ground. Boil the eggs ahead of time in simmering water for 7–8 minutes, then drain off the hot water and cool the eggs in cold water.

    Peel the onion and rinse it in cold water. Pour the milk over the bread and let it sit so it soaks through.

    Right after the meat, run the onion, garlic, and the milk-soaked bread (lightly squeezed out) through the grinder. The soaked bread makes the mixture more tender and juicy.

    Add salt, ground pepper, and a little paprika — feel free to adjust the seasonings to your taste. Mix everything together well until the mixture is smooth and even. Slap the meat against the bottom of the bowl a few times; this firms it up.

    With wet hands, flatten a portion of the meat mixture into a patty and set a peeled boiled egg in the center.

    Wrap the meat around the egg and shape it into a large cutlet. Roll the cutlet in breadcrumbs.

    Pour a little vegetable oil into a hot skillet and add the egg-stuffed cutlets.

    Fry them on all sides over low heat so they have time to cook through inside — this takes about 3–4 minutes. Then cover the pan with a lid and cook the cutlets another 3–4 minutes so they steam a little.
