Beef liver cutlets

    Put onion, garlic and liver into the blender bowl. I first put half of the prepared onion and half of the liver, so that it was better to grind. I put all the garlic at once. I put onions and garlic on the bottom so that they would grind better.

    Grind all the ingredients into a pulp. Then I did the same with the remaining onion and liver. You can put all the ingredients in a deep bowl and grind with an immersion blender. It is noticed that in this case the minced meat will be thicker in consistency.

    Drive in the egg, add mayonnaise, pour flour sifted through a small strainer, salt and pepper to taste. I took mayonnaise with a fat content of 67%. Instead, you can put fatty sour cream or cream in the minced meat in the same amount. With this addition, the cutlets will turn out more juicy.

    Mix everything thoroughly so that there are no flour lumps. You can let the minced meat stand for a little, about 10 minutes, and then mix it well again. Then there will definitely be no lumps left, since the flour will swell and interfere well with the total mass.

    Proceed to frying departure. Heat 2 tablespoons of vegetable oil in a frying pan. Do not pour a lot of oil so that the cutlets do not turn out greasy. We spread a small amount of minced meat, forming round or oval tortillas - I have oval ones. I spread the same amount of minced meat with a wooden spoon so that the cutlets came out the same size. Fry on one side over medium heat for 3 minutes.

    Turn over and fry until cooked for another 2 minutes. Before the next batch, pour a couple of spoonfuls of oil again and warm it up well. We use all the minced meat.
