Strained Matsun Spread (Kamats Matsun)
Strained matsun for breakfast — a bright mood all day long! Kamats matsun is delicious with rye bread and lavash.
Cooking method

Step 1:
To make 800 g of strained matsun, take 2 liters of fresh matsun.

You'll need a cotton or linen bag.

Step 3:
Pour the matsun into the bag.

Step 4:
Hang the bag of matsun on a hook and set a container underneath to catch the draining whey.

Step 5:
Leave the matsun to drain for a day in a cool place.

Step 6:
Strained matsun (it's called "kamats matsun").

Step 7:
Transfer the matsun to a bowl.

Step 8:
Strained matsun, ready to use.

Ingredients for the first version of the strained-matsun spread: matsun — 300 g, honey — 2 tsp, tarragon — 4 sprigs, green onion — 1 stalk, parsley — 1 sprig, salt and pepper to taste.

Add the honey to the matsun.

Add the herbs from the list, then salt and pepper.

Step 12:
Blend with a blender.

Ingredients for the second version of the spread: strained matsun — 150 g, brynza cheese — 100 g, sour cream or softened butter — 50 g, garlic — 1 clove, dill — 3-4 sprigs, ground black pepper, salt to taste.

Grate the cheese and garlic.

Step 15:
To the grated cheese and garlic, add chopped dill, the sour cream or butter, and the matsun.

Step 16:
Salt and pepper the mixture to taste.

Step 17:
Blend with a blender.

Ingredients for the third version: strained matsun — 300 g, juice of half a lemon, red radishes — 8-10, a small apple, salt and pepper.

Squeeze the juice from half a lemon.

Grate the radishes.

Step 21:
Add the grated apple to the radishes.

Step 22:
Pour the fresh lemon juice over the grated apple and radishes. Let them marinate for 5 minutes.

Tip the grated apple and radishes into a sieve and let the excess juice drain off.

Step 24:
Add the grated apple and radishes to the strained matsun, then salt and pepper.

Step 25:
Blend the mixture with a blender.

Make some sandwiches, eat, and enjoy!
