How do you make skillet chicken in sour cream sauce? Gather all the ingredients. Any chicken parts work for this recipe, and you can use chicken fillet alone if you like. I'm using boneless meat trimmed from the breast, thighs, and drumsticks. The leftover bone-in pieces can go toward making broth.

Heat a skillet until it's hot and add a little vegetable oil. Cut the chicken into evenly sized pieces — no need to make them too small. Add the chicken and fry it in the hot pan for 5 to 7 minutes, until golden.

While the chicken fries, prep the onion. Peel it, rinse it in cold water, and chop finely. Add the onion to the pan with the chicken and fry everything together for a couple more minutes. Then cover and let it simmer for 15 to 20 minutes. The onion will release some juice, which should be enough for braising, but add a splash of water if needed so the chicken doesn't start to scorch.

In a separate bowl, stir the sour cream and mustard into a little water. If you want a thicker sauce, whisk in a bit of flour at this point — about 1 tablespoon is enough.
