Step 1:
Let's start with the test. The dough turns out to be more than four pancakes, so if you wish, you can reduce the number of ingredients.
Step 2:
Sift the flour into a bowl, add salt, sugar and mix. Add the egg.
Step 3:
Add milk in small portions, stirring constantly, knead the dough.
Step 4:
We leave the finished dough for 15 minutes to rest. If there is time, it is better to leave for 30 minutes or prepare the dough in advance, for example, in the evening and fry pancakes in the morning.
Step 5:
While the dough is being infused, prepare the ingredients for the filling and for serving. I served pancakes with a salad of tomatoes and arugula, and you focus on your taste.
Step 6:
For the filling, cut the ham into cubes or thin slices, grate the cheese. Tomatoes for salad are cut into slices. Mix tomatoes with arugula and season with a dressing of oil, vinegar, salt and pepper.
Step 7:
Add melted butter to the rested dough. Mix it up.
Step 8:
And start frying pancakes. Fry on both sides until cooked, in a well-heated frying pan. Fry 4 large pancakes.
Step 9:
Spread ham on the finished pancake, optionally chopped basil leaf.
Step 10:
Spread grated cheese on top.
Step 11:
And roll up the pancakes with an envelope. Before serving, if desired, fry the pancakes until crispy.

Served hot with vegetable salad.
