Baked Rice with Chicken Breast and Vegetables

Step 1:
How do you bake rice with chicken breast and vegetables? Gather your ingredients. Feel free to change up the vegetables to your taste. Use long-grain parboiled rice.

Rinse the chicken breasts, pat them dry well, and cut them into medium pieces.

Drop the green beans into boiling salted water and blanch them at a gentle boil for about 5 minutes. Drain them in a sieve.

Peel and rinse the onion and cut it into small dice.

Wash, peel, and quarter the carrot lengthwise, then slice. If the carrot is thin, you can just cut it into rounds.

Wash the bell pepper and remove the seeds and stem. Cut it into medium dice. Don't cut the vegetables too small, or they'll overcook during baking.

Heat some of the vegetable oil in a skillet and add the chicken pieces. Fry them over medium-high heat until golden, turning the pieces now and then so they brown evenly on all sides. The seared crust keeps the meat juicy by locking in the juices.

Pour in hot water — enough to cover the rice and vegetables completely.

Bake the rice, vegetables, and chicken in an oven preheated to 350°F (180°C) for 60–80 minutes, until the rice is done and the water has fully evaporated. Near the end, uncover the foil.
