Step 1:
How to make pancakes from beef liver? Prepare the ingredients. Beef liver should preferably be taken fresh, I have veal liver, it is slightly lighter than beef. If it was frozen, then pre-defrost it by transferring it from the freezer to the bottom shelf of the refrigerator.
Step 2:
Rinse the liver thoroughly from blood clots, remove the films. Fill the liver with cold water and leave to soak for 15 minutes. This will save her from bitterness and unpleasant smell. Then drain the water and dry the liver.
Step 3:
Cut the prepared liver into pieces.
Step 4:
Put the liver in the blender bowl, pour in the milk.
Step 5:
Whisk everything until smooth. Instead of a blender, you can scroll the liver through a meat grinder and only then combine it with milk.
Step 6:
Pour the liver mass into a bowl. Add eggs. Whisk everything until smooth with a whisk.
Step 7:
Pour in the vegetable oil and whisk again so that the oil is distributed throughout the mass.
Step 8:
Add flour, salt, pepper.
Step 9:
Mix the dough thoroughly so that there are no lumps. Leave the dough to stand for 10 minutes. If the consistency turns out to be too liquid, add a little more flour.
Step 10:
In a frying pan, heat a little vegetable oil over moderate heat. Fry the thin pancakes for about 3 minutes on each side, until golden brown.
Step 11:
Pancakes can be served just like that, or you can cook a cake based on them by making a layer of vegetables. Bon appetit!
Fresh liver that has not been frozen has the greatest nutritional value. Its shelf life is 2 days.
If the liver is stored at room temperature, this period is reduced to 6-8 hours. After this time, the liver turns into a "hotbed" of microbes. To increase the shelf life of the product, it is placed in the freezer. However, under the influence of low temperatures, the delicacy loses its nutritional properties.
Therefore, if it is not possible to purchase fresh liver, it is better to give preference to a product that has passed only one freezing cycle.
If the liver has been frozen repeatedly, then after thawing, the following signs will tell about it:
- blurred words on the label, including packaging date, manufacturer, shelf life, weight;
- there will be pink crystals on the surface of the liver, the liver itself is not uniformly colored.

Be sure to wash the eggs before use, as even the seemingly clean shell may contain harmful bacteria. It is best to use food detergents and a brush.
Be prepared for the fact that flour may need more or less than indicated in the recipe. Focus not on the amount of flour, but on the desired consistency of the dough. To avoid mistakes, read about flour and its properties!
Use oil with a high smoking temperature for frying! Any oils are useful only until a certain temperature is reached - the point of smoking, at which the oil begins to burn and toxic substances, including carcinogens, are formed in it.
Unrefined oils, with rare exceptions, have a low smoking point. There are a lot of unfiltered organic particles in them, which quickly begin to burn.
Refined oils are more resistant to heating, and their smoking point is higher. If you are going to cook food in the oven, on a frying pan or grill, make sure that you use oil with a high smoking point. The most common of the oils with a high smoking point: refined varieties of sunflower, olive and grape.
