Grilled Cheese Sandwich

The fastest, easiest recipe there is — even a kid can make it! A grilled cheese is the classic American sandwich cooked right in a skillet: the cheese melts inside while the bread turns golden and crisp. It's perfect for breakfast or a quick snack.

    How do you make a grilled cheese sandwich? Gather your ingredients. I'm making one sandwich, so these are the proportions for a single serving. Choose a good-quality, natural cheese that melts well — that's the key. Beyond that, it's up to you: grate a block, use pre-sliced cheese, or slice it yourself. The classic version is made with cheddar, but even American-style processed cheese slices work.

    The classic recipe uses sandwich bread, like mine, but you can make these with just about any bread. White or whole-grain both work; I haven't tried rye. Take the butter out of the fridge ahead of time so it softens, and use a good-quality butter with no vegetable-fat blends. Butter one side of each slice of bread.

    Set a skillet over low heat — mine is nonstick with a thick bottom. Add a tablespoon of butter and let it melt. I always add a little vegetable oil to the butter so it doesn't burn while frying.

    Place one slice of bread in the pan, buttered side down. Top it with the cheese, grated or sliced. Cover the pan and turn the heat to its lowest setting. Wait for the cheese to start melting.

    Once it does, top with the second slice, this time buttered side up. Press down gently with a spatula so the cheese sticks to the bread.

    Check the bottom slice — once it's golden, carefully flip the sandwich and toast the other side to match. Don't turn up the heat; the butter burns fast. Take the sandwich off the heat and serve it right away, while the cheese is hot.

    If you used sandwich bread, cut the sandwich diagonally in half — that's how a classic grilled cheese is served. Enjoy!

  • Any cheese works here — hard, semi-hard, or a soft one like mozzarella. Just make sure it's tasty, good-quality, free of milk-fat substitutes, and melts well.
