- A friend of mine always bakes "country potatoes." She serves them with this spread, which we're about to make. It's just the thing! Let's cut all the sandwich ingredients into pieces of various sizes. Sprinkle the onion and herring with lemon and transfer them to a blender jar. Grind all the ingredients until you get a mass with a consistency like pâté, and at the end add the olive oil. All that's left is to season and salt to taste. You can serve the spread with toast or put it on sandwiches. I also like to use it to stuff eggs or to fill an appetizer pita roll. Garnish the finished herring-and-egg sandwiches with sprigs of cilantro or other fresh herbs.
