Step 1:
Prepare the ingredients according to the list. In a deep bowl, pour the sifted wheat flour. It is necessary to sift it to remove foreign elements that may be in the package with flour, as well as to saturate the product with oxygen, which, in turn, will make the dough softer. Add vegetable oil, salt to the flour and pour in cold water. Knead the dough.
Step 2:
First mix the ingredients with a spoon or a spatula when they begin to gather into one mass. We continue kneading the dough with our hands. At first it will seem that the dough is very sticky and liquid, but in the process of kneading the dough will gradually become smooth and elastic, it will stop sticking to your hands.
Step 3:
If necessary, you can add quite a bit of flour, but with flour you need to be careful not to clog the dough, it should be very soft. We leave it in a bowl on the table for 15 minutes, covering it with a towel on top.
Step 4:
Meanwhile, prepare the filling. I used coriander and parsley from fresh greens, if desired, the set of greens can be changed to taste. Fresh herbs are thoroughly washed, dried with a paper towel and finely chopped with a knife.
Step 5:
Put soft cottage cheese in a bowl. If the cottage cheese is granular, then it must first be wiped through a sieve or punched with a blender. Add salt, ground black pepper to taste and chopped herbs to a bowl with cottage cheese, mix the ingredients thoroughly until smooth.
Step 6:
We divide the rested dough into three equal parts. We roll out each of them into a thin round layer.
Step 7:
In the center we spread one third of the curd filling.
Step 8:
Fasten the edges of the dough, forming a pouch.
Step 9:
Turn it seam down and carefully, so as not to tear the dough, roll out the dough with a rolling pin with a filling into a thin cake. The pan does not need to be greased with oil, we heat it up.
Step 10:
We spread the cake blank on a heated frying pan, fry it on both sides for 5 minutes until a golden crust forms, it is better to fry under a closed lid so that it is well baked inside. To prevent the tortilla from starting to swell during frying, it can be pricked in several places with a fork. Remove the tortilla from the pan and immediately lubricate with butter. We serve it to the table. Bon appetit!
