Baked Pollock with Mayonnaise and Onion
Delicious, super easy, and made from budget-friendly ingredients — a great dinner! Baked pollock with mayonnaise and onion couldn't be simpler to make. The seasoned mayo-and-onion topping keeps the fish incredibly juicy and flavorful. Serve it on its own or with a side dish and a fresh vegetable salad.
Cooking method
-
Step 1:
How do you bake pollock with mayonnaise and onion? It's quick and easy! Start by gathering the ingredients on the list. Instead of whole fish, you can use frozen fillets. Just thaw them ahead of time on the bottom shelf of the refrigerator and drain off all the liquid.
-
Step 2:
Clean the fish, removing the innards and fins, and rinse it well. Cut it into serving-sized pieces.
-
Step 3:
Put the prepared pollock in a bowl and season with fish seasoning, salt, and pepper. If you use a ready-made spice blend, be sure to check the label — these mixes often already contain salt and pepper, so keep that in mind or you risk over-seasoning. You can leave out the fish seasoning entirely, but it makes the dish more fragrant and flavorful.
-
Step 4:
Toss everything well so all the pieces are coated with seasoning. Let the pollock marinate for 15 minutes.
-
Step 5:
While the fish marinates, make the topping. Peel the onion and cut it into small dice. Heat the vegetable oil in a skillet and fry the onion, stirring, until golden brown.
-
Step 6:
In a bowl, combine the mayonnaise, fried onion, lemon juice, and lemon zest if using. Mix well.
-
Step 7:
Arrange the pollock pieces in a greased baking dish and spread the onion-mayonnaise mixture over the top. Bake in an oven preheated to 350°F (180°C) for 25 to 30 minutes. The exact time depends on your oven and the size of the fish pieces. The mayonnaise topping should turn lightly golden but not burn.
-
Step 8:
Transfer the finished fish to a plate and serve with any side dish you like. Enjoy!
- Besides pollock, you can use other white fish such as hake, cod, or whiting, as well as any kind of salmon or trout.
- Keep in mind that ovens vary. The temperature and cooking time may differ from what's listed here, so watch your dish and adjust as needed for the best results.
- Turn the oven on ahead of time (10 to 20 minutes before you start cooking) so it has a chance to reach the right temperature.
- Since everyone's tolerance for salt, sweetness, bitterness, heat, and acidity is different, always add spices and seasonings to your own taste. If you're using a seasoning for the first time, remember that some are especially easy to overdo (chili pepper, for one).
