Salmon Pancake Roll-Ups
A simple appetizer of thin pancakes rolled up with soft cheese and salted salmon. Blini — thin Russian pancakes — show up often at our table. If you've got a sweet tooth, jam, caramel, or preserves are the classic partner, but when you're in the mood for something savory, pancakes with salmon and cheese are the answer. These little roll-ups round out a weekend breakfast and look right at home on a party spread. Honestly, even the sweet-tooths won't turn them down.

Step 1:
Gather your ingredients. I'm giving a classic milk-based pancake (blini) recipe here, but feel free to use your own favorite — just don't make the batter too sweet. Use whatever salted red fish you like: pink salmon, salmon, or chum. I'm using mozzarella, but any soft cheese works, as will cream cheese or a fresh farmer's cheese. Herbs are optional; I've got fresh dill to garnish the finished pancakes.

Step 2:
Crack the egg into a bowl, add the salt and sugar, and whisk. Pour in the milk, add the flour, and stir until smooth. Thin the batter to the consistency you want with warm or hot water. If you like, stir a little vegetable oil into the batter too. Heat a skillet, brush it with oil, and cook the pancakes on both sides over good heat until done. Brush each finished pancake with butter so they don't stick together.

Step 3:
Unwrap the cheese and grate it on the coarse side of a box grater. Again, use whatever cheese you like — grate a firm soft cheese, or stir a spreadable cream or farmer's cheese together with chopped fresh herbs like dill. Don't add salt to the filling; the fish is already salty, and it's easy to overdo it.

Step 4:
Lay grated cheese on each pancake (best while the pancakes are still warm, so the cheese softens a little), add pieces of salmon (as much as you like), and roll each one up neatly. Serve them whole, or slice each roll into bite-size pieces.

The salmon pancake roll-ups are ready to serve. They're wonderful with a cool summer sauce like tzatziki. Set them out as a party appetizer, or enjoy them as a wholesome breakfast or snack.
