Meatless Tomato Sauce for Pasta
Not the simplest sauce, but wonderfully tasty and fragrant! This meatless tomato sauce for pasta is made for anyone who loves tomatoes. It comes together from fresh vegetables, simmered right in the skillet. Feel free to work in any seasonings, spices, or extra vegetables you like.

Step 1:
How do you make this pasta sauce? Gather the ingredients from the list. Choose tomatoes that are juicy, meaty, and sweet. That said, tomatoes that aren't picture-perfect will work just fine here — they get cooked down anyway.

Wash the tomatoes, score a shallow X in the bottom of each, put them in a bowl, and cover with boiling water. Let them sit for a few minutes, then slip off the skins — blanching this way makes peeling quick and easy. Cut the tomato flesh into small pieces.

Wash the bell pepper, remove the seeds and stem, and cut it into small pieces.

Peel and finely mince the garlic — a garlic press works well here. Wash the parsley, pat it dry, and chop it with a knife.

Heat the vegetable oil in a skillet and sauté the bell pepper for about 3 minutes, stirring with a spatula.

Add the chopped tomatoes to the pepper and stir to combine.

Simmer over high heat, stirring, for another 8 minutes, until the excess liquid cooks off.

Stir in the sugar and black pepper, then pour in the soy sauce. Taste and adjust, adding whatever it needs. Mix well and let it simmer over low heat for 1 minute. Take the pan off the heat, stir in the chopped parsley, and it's done. Your meatless tomato pasta sauce is ready to serve!
- One summer I had pasta at a restaurant with a really interesting vegetable sauce built on tomatoes, bell pepper, and celery. I set out to recreate it at home, though I didn't have celery stalks on hand — it's noticeably more fragrant with celery, but this version is great too. Beyond the vegetables listed, you can also add onion or carrot, entirely up to you.
- Keep in mind that soy sauce is fairly salty. Cut back on the salt elsewhere, or you risk over-salting the dish.
- You can swap the fresh tomatoes for ketchup, canned tomatoes in their juice, or tomato paste. Adjust the amounts to taste.
