Skillet Rice with Onions and Carrots
A tasty, colorful, aromatic dish with a hint of Eastern flavor! Rice cooked in a skillet with carrots and onions is one of the simplest — yet most interesting and delicious — dishes around. It works as a side for meat, chicken, or fish, and as a standalone dish for a meatless menu and beyond. It's easy to vary the flavor with different spices and seasonings. Soy sauce, turmeric, and garlic make it not only bright and savory but beautiful on the plate, too.

Step 1:
Gather your ingredients. For this dish, use long-grain or parboiled rice so it doesn't turn to mush during cooking. Feel free to adjust the mix of seasonings and spices to your taste.

Peel the onions and cut them into small dice.

Wash, peel, and grate the carrots. Rinse the rice thoroughly, changing the water several times until it runs clear. This washes away dust and dirt and removes excess starch.

Pour vegetable oil into a skillet (a deep, heavy-bottomed skillet or a sauté pan works best for this dish) and heat it up. Add the prepped vegetables — carrots and onions. Sauté over medium heat until lightly golden.

Add the rinsed rice to the vegetables in the pan. Season with salt, ground black pepper, turmeric, and any other spices you like — but keep in mind you'll be adding soy sauce, so go easy on the salt. Tuck the garlic cloves into the pan to add flavor. Pour in enough water to cover everything by about an inch (a couple of centimeters). Bring to a boil, then reduce the heat to low. Cover and simmer for about 20 minutes.

Then take off the lid and remove the garlic cloves. Pour in the soy sauce, stir, and keep the dish on the heat for about another 5 minutes. Turn off the heat. Let the dish rest under the lid for a few minutes, then serve, sprinkling fresh herbs on top if you like.
