Step 1:
Prepare the ingredients. Rice for the dish is better to use long-grain or steamed, so that during heat treatment it does not turn into porridge. The set of seasonings and spices can be changed to your liking.

Peel the onion and cut into cubes.
Step 3:
Carrots are washed, cleaned and grated. Rice is thoroughly washed, repeatedly changing the water until the water becomes transparent. This will help not only get rid of dust and dirt, but also remove excess starch and gluten.
Step 4:
Pour olive oil into a frying pan (a frying pan for cooking this dish is better to use deep and with a thick bottom or a saucepan). We warm it up. We put cooked vegetables on the oil: carrots and onions. Fry the vegetables over medium heat until lightly browned.
Step 5:
We send washed rice to the vegetables in the pan. Add salt, ground black pepper, turmeric, other spices if desired, but you need to take into account that soy sauce will be added so as not to over-salt the dish. Put garlic cloves in the pan, they will give flavor to the dish. Fill the contents of the pan with water so that it covers everything a couple of centimeters higher. Let the broth boil, reduce the heat to a minimum. Cover the pan with a lid and simmer for about 20 minutes.
Step 6:
Then remove the lid from the pan, remove the garlic cloves. Pour in the soy sauce, mix and keep the dish on the fire for about 5 minutes. Turn off the fire. We let the dish stand under the lid for a few minutes and serve it to the table, sprinkling fresh herbs on top if desired.
Step 7:
Spicy, spicy and fragrant rice with carrots and onions is delicious as an independent dish, but also a piece of boiled or fried meat will perfectly complement it. Bon appetit!
