Cooking method
-
Step 1:
Prepare the filling ingredients. Grate the feta and hard cheese on the coarse side of a box grater. Peel and chop the onion. Wash and chop the green onion and parsley, trimming the stems off the parsley first.
-
Step 2:
Crack the eggs into a small bowl and beat them with a fork.
-
Step 3:
Heat the vegetable oil in a skillet and add the chopped onion and ground chicken together, seasoning with salt and spices to taste. Cook over medium heat, stirring, until the liquid has cooked off — about 15 minutes. Taste and adjust the seasoning as needed.
-
Step 4:
In a large bowl, combine all the filling ingredients: the meat, feta, hard cheese, and herbs. Pour in the beaten egg, holding back a little to brush the pie. Taste and adjust with salt and pepper.
-
Step 5:
Thaw the puff pastry at room temperature. My package weighs about 2 pounds (1 kg); I divided it in half and used one half, which I then cut into 2 pieces, since we need two sheets. Roll the dough into a rectangle about 9 by 12 inches (23 by 30 cm). I rolled it on a silicone mat without any flour. Roll out the second piece the same way.
-
Step 6:
Line a baking sheet with parchment paper cut to size. Brush the parchment with softened butter and lightly dust with flour so the dough won't stick. Lay down one sheet of dough.
-
Step 7:
Spread the filling over it, leaving the edges bare.
-
Step 8:
Lay the second sheet of dough on top and pinch the edges tightly to seal.
-
Step 9:
Brush the top with the reserved beaten egg and prick it in a few spots with a fork to let steam escape.
-
Step 10:
Bake the pie at 350°F (180°C) for 30 minutes, until golden and cooked through.
- Instead of ground chicken, you can use a pork-and-beef blend. You can also add a little butter to the filling for extra flavor. Fresh dill works well among the herbs, too. A little effort and a delicious pastry lands on your table!
