French-Style Pork and Potatoes in a Skillet
Really tasty, made from simple ingredients, and special enough for company! French-style pork with potatoes cooked right in the skillet is easy to make in small portions. It's a hearty dish that works just as well for a weeknight family dinner as it does for a celebration.

Step 1:
How do you make French-style pork and potatoes in a skillet? Start by gathering the ingredients. Choose boneless pork. Rinse the mushrooms under running water to remove any grit.

Peel the onion, rinse it in cold water, and finely chop it. Slice the mushrooms as well. Heat a skillet until hot, add a little vegetable oil, and add the chopped onion and mushrooms. Fry everything together for 2–3 minutes.

Peel the potatoes, rinse them, and cut into rounds or slightly smaller pieces. Add the potatoes to the skillet with the mushrooms and cook, covered, for about 10 minutes. The potatoes should be nearly tender. Season lightly with salt.

Cut the pork into serving-size pieces about 1/2 inch (1–1.5 cm) thick. Pound each piece lightly with a meat mallet.

Use a large skillet for frying. Add the pork pieces to hot oil and brown them well on one side. Sprinkle with a little salt and spices. Flip the meat and lower the heat. Spoon the mushroom-and-potato mixture onto each piece of pork.

Add a little mayonnaise and top with tomato rounds.

Sprinkle grated cheese over the top. Cover the skillet and cook over low heat for 15–20 minutes. By then the meat will be fully cooked and the cheese melted.

- Buy fresh, medium-sized mushrooms — snow-white, with no spots, damage, or off smell. They shouldn't feel slimy. Rinse them thoroughly under warm or cold running water and trim off any bruised spots. Tiny mushrooms under 3/4 inch (2 cm) don't need peeling — just rinse them well. Larger mushrooms can be peeled of their skins if you like.
