A herbaceous annual plant belonging to the cereal family. This grain crop was cultivated in ancient times. Barley is the northernmost cereal and gives various names to cereals - Dutch, pearl barley, barley groats. Its grains can contain up to 15.8 percent protein, 76 percent carbohydrates, 9.6 percent fiber, as well as vitamin A, and vitamin B, D and E groups.
It was usually used when cooking porridge or used as a hearty side dish in Eastern Europe. Nowadays, barley is added to meat dishes and soups in order to give them an exquisite flavor. As one of the bases for brewing, it is used for the production of barley malt. In Latvian cuisine, barley or barley flour is used with wheat flour for baking bread products, in North Caucasian cuisines, tortillas are also baked from this flour.
