Corn Dogs (Sausages in Batter)
A fun snack for any occasion! Sausages dipped in batter are about as versatile as it gets. You can make them outdoors by the campfire — just bring the batter in a jar, some sausages, and skewers — or at home for a laid-back get-together at the table. They even hold their own on a party spread! What's not to love? In the U.S. this treat is a classic known as the corn dog, popular enough to have its own annual festivals.

- Sift the wheat flour into a good-sized bowl, then sift the corn flour (cornmeal) in on top. Whisk the two flours together thoroughly. 2. Add the paprika, baking powder, salt, and sugar to the flour mixture, then whisk everything together well again. 3. Crack in the egg and mix well. 4. Now pour in the milk and whisk the batter until it's completely smooth. To be sure there are no lumps, you can beat it with a mixer. The finished batter should have the consistency of thick sour cream. 5. With the batter ready, prep the sausages: peel off any casing and cut them in half — or just buy cocktail-size sausages to begin with. Push a wooden skewer into each one. 6. Now for the best part — the frying. Pour the batter into a tall glass, and spread some flour on a flat plate. Set a large, heavy-bottomed, deep skillet over high heat and pour in the oil. 7. Take the sausages one at a time and roll each in flour. Dip it into the batter, then lift it out with a swirling motion and let the excess batter drip off for a moment. 8. Lower the battered sausage into the hot oil and fry until the coating is cooked through and golden. Repeat with the rest. Serve the corn dogs hot with ketchup and mustard. Enjoy!
